Cooking, craft and colouring-in are fun easy ways to encourage your child to creatively explore. Here are a few recipes and stencils to while away a rainy day or just spend quality time with your child.

At Echidna we offer the children nutritious meals each day. For some, this is a wonderful opportunity to try new foods that perhaps they have not had before. Our on-site cook has picked out some the children's favourite recipes for you to enjoy at home.

Chicken & Meat

Childrens Recipe - Chicken Balls
Playing simple games like "What colour is your pumpkin?" or "How many beans do you have on your plate?" can be a fun way to eat a meal.

Chicken Balls (makes 10)

You Will Need...

  • 250g chicken mince
  • 1 egg
  • 1/2 cup cornflake crumbs
  • 1/2 cup cheese
  • 4 cups grated vegetables or your choice


  1. Mix all the ingredients together into balls and bake in the oven on a greased tray for about 30 minutes or until golden brown.


Childrens Recipe - Salmon Rissoles
To vary the recipe, try substituting the rice with mashed potato. Salmon rissoles are a great way to introduce seafood into your child's meals.

Salmon Rissoles (makes 10)

You Will Need...

  • 1 can of salmon
  • 2 cups of cooked rice
  • Grated vegetables of your choice
  • 2 eggs
  • 1 cup of breadcrumbs
  • 1 desert spoon soy sauce
  • 1 desert spoon sweet chilli sauce
  • 1 desert spoon tomato sauce


  1. Mix all ingredients together.
  2. Roll into balls and flatten.
  3. Lightly coat in flour.
  4. Place on greased oven tray and cook until golden brown.

Rice & Pasta

Childrens Recipe - Fried Rice
Fried Rice is always a favourite! It is so easy to make - even the kids can get in and help mum or dad with cooking in the kitchen.

Fried Rice (serves 4)

You Will Need...

  • 4 cups of cooked rice (cooked the day before)
  • 3 eggs
  • Finely sliced ham (or bacon)
  • Cooked peas and corn
  • Sweet soy sauce to flavour


  1. Cook rice day before and allow to dry out.
  2. Mix eggs and cook like an omelet then finely slice.
  3. Cook finely sliced ham (or bacon).
  4. Mix all ingredients together and flavour with sweet soy sauce.


Childrens Recipe - Vegetable Slice
A great way to encourage kids to eat vegetables is before you start dinner, leave a plate of carrot, cucumber and zucchini sticks out for hungry kids to munch on.

Vegetable Slice (serves 4)

You Will Need...

  • Grated - carrots, zucchini, sweet potato and potato
  • 2 cups frozen peas and corn
  • 1 cup grated cheese
  • 4 eggs
  • 1 desert spoon chicken stock powder or 1 1/2 cup liquid stock
  • Self raising flour - enough to make a cake mix batter


  1. Mix vegetables, eggs, cheese and stock together - add flour until mixture looks like cake batter.
  2. Pour into casserole dish and bake until golden brown and firm to touch.
